Why and How I Garnished my Okra Soup with Bell Peppers
I discovered bell peppers and my life has not remained the same. I do not recall what prompted this discovery but when I did, it was for pasta and stir fries. Bell Peppers in Nigeria are not really considered for traditional meals and I have unconsciously taken it upon myself to add them to native meals. Shockingly they turn out amazing.
One rainy day, I was thinking of how to spice up my dad’s everyday meal of Okra soup and I saw bell peppers sitting in the corner. Majority of the people who make Okra soup, go through the routine of using assorted proteins, crayfish, oil, peppers, onion et cetera. I got bored of it, my dad too and I thought to myself, why not do something different? Here’s what I did.
I got bell peppers, cut them to the size of the okra. I had shrimp and onions ready. In 2 tablespoons of groundnut oil, I sautéed all the ingredients with black pepper, seasoning and salt. I put these seasonings according to the size of the bell peppers. After I had stirred it for a while, I poured it in my already made okra and stirred. Food is ready!!
This didn’t affect the soup in any way except make it super delicious. I made this for a friend’s mum because she complained about being bored of eating Okra soup. And let me tell you, she loved it and asked that I teach her.
